I'm just wanting some tips on creating skins since I am knew and just starting to try and figure out how to do them! Anything is helpful

Your best place to get advice and help would be the Texture forum here. Why? because there are tons of tutorials there plus you can post a pic of your work in progress to see where you could improve it before you submit it to the shop.

Skins are definitely one of the hardest things to texture so have lots of patience. It will take time and practice to get it right.

I think I mainly have three big recommendations for you here:
1) Look at how other people have made skills to see how other people have done it, how they have positioned and shaped things on the body. You got to know where things are, it is also useful to look at how real people look like.
2) Use color layers to get the right tone and darkness for your skins instead of trying to use colors when actually creating the shadows and lights. I always actually only use black and white when I've worked on skins and not just skins. This helps to avoid discoloration, it is very, very easy to get the tones and saturation wrong in different parts of the body when trying to paint with colors. Most common examples of this is shadows looking more grey/ashy instead of like realistic shadows and highlights looking more yellow or more saturated than the rest of the skin. As a customer, I am very sensitive to discoloration, it really bothers me and is a sign of inexperience.
If you want to add color like blush or make up or colored tattoos on the skin then you can add those on top of the color layers.
3) Do not be afraid to ask for advice and feedback, preferably from people you do not know. The forums are great for this although even here, it sometimes seems that people don't want to be too critical. You can also ask your friends, but you need to remember that friends are less likely to be completely honest. But complete honesty really is the best, especially if it comes with advice on how to improve your texture.

My biggest problem is when the skin comes out looking yellow or unrealistic and I can never find the right shade which gets super annoying.

If it comes out yellow then most likely, the color saturation is too high, this can also happen when trying to use either the burn or the dodge tool on colors which really isn't a good idea when it comes to skins, always keep it layered, much easier to edit and fix mistakes. Nude tones have low saturation. This is why I like using color layers, you can easily adjust the darkness and the saturation and the tone and the tone/saturation won't go off when you add highlights/shadows.
